Crisp Dorayaki Waffles with Nutty Topping
A vegan twist on a Japanese classic, these crisp dorayaki waffles are topped with a nutty mixture of almond and crunchy elements.
Ingredients
- β1 cup dorayaki mix
- β1 cup almond milkunsweetened
- β1/4 cup canola oilvegan
- β1/2 cup nutty crunch mixture (see notes)
- β2 tbsp maple syrupadjust to taste
- β1 tsp vanilla extract

Preheat the waffle iron according to the manufacturer's instructions.

In a large bowl, whisk together the dorayaki mix, almond milk, canola oil, and vanilla extract.

Once the waffle iron is hot, pour about 1/4 cup of the batter onto the center of the iron.

Cook for 3-5 minutes, until the waffles are golden brown and crispy.

Repeat with the remaining batter, until all the waffles are cooked.

To make the nutty crunch mixture, combine the nutty and crisp elements in a small bowl.
