Cheesy Turnip Quesadilla
A flavorful and spicy Venezuelan-inspired quesadilla filled with sautéed turnips and a blend of cheeses.
Ingredients
- ●2 medium Turnipspeeled and thinly sliced
- ●1 cup, shredded Nutty Cheesesuch as Manchego or Queso Fresco
- ●1/2 cup, shredded Cheesy Cheesesuch as Mozzarella or Monterey Jack
- ●4 large tortillas quesadillacorn or flour tortillas
- ●2 tablespoons Olive Oilfor sautéing

1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.

2. Add the sliced turnips and cook for 5-7 minutes, or until they are tender and lightly browned.

3. In a separate pan or griddle, warm the tortillas over medium heat for 1-2 minutes on each side.

4. Spoon about 1/4 cup of the cooked turnips onto half of each tortilla, followed by a sprinkle of cheese.

5. Fold the tortillas in half to enclose the filling and cook for 2-3 minutes, or until the cheese is melted and the tortillas are crispy.

6. Flip the quesadillas and cook for an additional 2-3 minutes, or until the other side is also crispy and golden brown.

7. Cut the quesadillas into wedges and serve hot with your favorite toppings, such as salsa or sour cream.
