Japanese Vegetable Kushikatsu
A delicious and easy-to-make Japanese-inspired snack or side dish, featuring crispy fried vegetables coated in a light batter.
Ingredients

- β1 cup, sliced zucchini
- β1/2 cup, sliced yellow onion
- β1/4 cup beef broth
- β1/2 cup all-purpose flour
- β1 beaten egg
- β2 tablespoons cornstarch
- β1/2 cup vegetable oil
- β1/4 cup soy sauce
- β1 tablespoon sugar

In a large bowl, whisk together flour, cornstarch, and a pinch of salt.

Add the beaten egg and mix until a smooth batter forms.

Add the beef broth and mix until the batter is free of lumps.
