Canadian Rice Bake
A nutritious and flavorful rice bake with grassy notes, perfect as a hearty meal.
Ingredients

- ●2 cups Vegetable brothlow-sodium

Preheat oven to 375°F (190°C).

In a large pot, bring the vegetable broth to a boil. Add the wild rice and quinoa, reduce heat to low, cover, and simmer for 20 minutes.

In a separate pan, sauté the mushrooms, onion, and garlic until the vegetables are tender.

In a large mixing bowl, combine the cooked rice mixture, sautéed vegetables, and cheddar cheese.

Transfer the mixture to a 9x13 inch baking dish, drizzle with melted butter, and top with additional shredded cheese if desired.
