French Pomegranate Crepes
Delicious and nutritious crepes filled with a sweet pomegranate filling, perfect for a French-inspired dessert.
Ingredients
- β1 1/2 cups crepe flour
- β1 cup almond milk
- β1/2 cup water
- β1 cup pomegranate juice
- β1/2 cup pomegranate seeds
- β2 tbsp honey
- β1 tsp vanilla extract
- β1/4 cup (melted) butter
- β1/4 cup powdered sugar

In a large mixing bowl, whisk together the crepe flour and almond milk.

Add the water, pomegranate juice, and honey to the bowl and whisk until smooth.

Add the vanilla extract and melted butter to the bowl and whisk until well combined.

Heat a small non-stick pan over medium heat.

Pour a small amount of the batter into the pan and tilt the pan to evenly coat the bottom.

Cook the crepe for 1-2 minutes, until the edges start to curl and the surface is dry.

Loosen the crepe with a spatula and flip it over.

Cook the other side of the crepe for another minute, until it is lightly browned.

Repeat with the remaining batter to make 8-10 crepes.

To make the filling, mix together the pomegranate seeds and powdered sugar in a small bowl.

Spoon the filling onto one half of each crepe, leaving a 1/2 inch border around the edges.
