Smoky Thai Hash
A flavorful and spicy Thai-inspired dish made with smoky sausage, potatoes, and peruvian peppers.
Ingredients

- β1/2 pound smoky sausageThai-style sausage
- β1 peruvian peppersany color
- β1 medium red onionthinly sliced
- β2 large potatoesdiced
- β2 tablespoons hashoptional
Instructions

Add the sliced red onion and cook until softened, about 3-4 minutes.

Add the diced potatoes and cook for an additional 5 minutes, stirring occasionally.

Add the smoky sausage and cook until browned, breaking it up with a spoon as it cooks.

Add the peruvian peppers and cook for an additional minute.

If using noxious peppers, add them now and stir to combine.

Use a spatula to create hash marks in the pan, allowing excess moisture to escape.
