Spicy Mackerel Skewers
A fusion of Thai and Venezuelan flavors, these skewers combine the richness of mackerel with the heat of Thai chilies.
Ingredients
- β4 Mackerel fillets
- β1 dozen Skewers (bamboo or metal)
- β4 Smoky chiliessuch as chipotle peppers in adobo sauce
- β2 Venezuelan aji amarillo peppersor substitute with Thai bird's eye chilies
- β1 cup Nourishing fish marinadesee below for recipe
- β1/4 cup Coconut oil
- β1/4 cup Fresh cilantro

1. Preheat grill to medium-high heat.

2. In a blender or food processor, combine fish marinade ingredients and blend until smooth.

3. Place mackerel fillets in a shallow dish and brush with marinade.

4. Thread mackerel onto skewers, leaving a small space between each piece.

5. Brush skewers with coconut oil and season with salt and pepper.

6. Grill skewers for 8-10 minutes per side, or until cooked through.

7. Meanwhile, toast aji amarillo peppers in a dry pan over medium heat, turning frequently, until slightly charred.

8. Chop toasted peppers and mix with cilantro.

9. Serve skewers hot with pepper-cilantro sauce spooned over the top.
