Uruguayan Smoked Casserole
A hearty, comforting casserole from Uruguay, featuring smoky flavors and nourishing ingredients.
Ingredients

- ●1 cup, peeled and chopped carrots
- ●1 cup, sliced zucchini
- ●1 cup, sliced red bell pepper
- ●1 medium, chopped onion
- ●3 cloves, minced garlic
- ●1 can (14 oz) canned diced tomatoes
- ●8 oz casserole noodles
- ●1 cup greek yogurt

Preheat oven to 375°F (190°C).

Cook casserole noodles according to package instructions. Drain and set aside.

In a large skillet, sauté the chopped onion and minced garlic until softened.

Add the sliced zucchini, red bell pepper, and chopped carrots to the skillet. Cook until the vegetables are tender.

Stir in smoked paprika, canned diced tomatoes, and cooked noodles.

Transfer the mixture to a 9x13 inch baking dish.

In a separate bowl, mix together Greek yogurt and a pinch of salt.

Spread the yogurt mixture evenly over the top of the casserole.
