Braised Beet Pilaf
A hearty, comforting pilaf dish with roasted beets and a hint of Ukrainian flair.
Ingredients
- β2 medium beets
- β1 cup pilafgluten-free
- β2 tbsp olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 tsp dried thyme
- βto taste salt
- βto taste black pepper

Preheat oven to 425Β°F (220Β°C).

Peel and chop the beets into 1-inch cubes.

Toss beets with 1 tablespoon olive oil, salt, and pepper on a baking sheet.

Roast beets in the oven for 25-30 minutes, or until tender.

Heat remaining 1 tablespoon olive oil in a large skillet over medium heat.

Add chopped onion and cook until translucent, about 5 minutes.

Add minced garlic and cook for an additional minute.

Stir in pilaf and cook for 2-3 minutes, or until lightly toasted.
