Norwegian Butternut Squash Casserole
A warm and comforting Norwegian-inspired casserole made with roasted butternut squash, nourishing ingredients, and a crispy topping.
Ingredients
- β1 medium Butternut squash
- β2 tablespoons Unsalted butter
- β1 cup All-purpose gluten-free flour
- β1 cup Milk
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β1 cup Nourishing oats
- β1/2 cup shredded Cheddar cheese

Preheat oven to 375Β°F (190Β°C).

Peel, de-seed, and chop the butternut squash into 1-inch cubes.

In a large mixing bowl, combine the flour, milk, salt, and black pepper. Stir until smooth.

Add the chopped butternut squash to the bowl and mix until well coated.

Transfer the mixture to a 9x13 inch baking dish.

In a separate bowl, mix together the oats and shredded cheese.

Sprinkle the oat and cheese mixture evenly over the top of the casserole.
