Andalusian Paccheri Pasta with Cazuela
A hearty and flavorful pasta dish inspired by the cuisine of Andalusia, Spain. The combination of paccheri pasta, cazuela sausage, and a rich tomato sauce makes for a satisfying meal.
Ingredients
- β12 oz paccheri pasta
- β1 lb cazuela sausage, sliced
- β1 medium onion, chopped
- β3 cloves garlic, minced
- β28 oz canned crushed tomatoes
- β2 tbsp olive oil
- βto taste salt
- βto taste black pepper

Bring a large pot of salted water to a boil and cook the paccheri pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

In a large skillet, heat the olive oil over medium-high heat. Add the sliced cazuela sausage and cook until browned, about 5 minutes.

Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent, about 5 minutes.

Add the canned crushed tomatoes to the skillet and stir to combine. Bring the sauce to a simmer and let cook for 10-15 minutes, stirring occasionally.

Add the cooked paccheri pasta to the skillet, tossing to combine with the tomato sauce. If the sauce seems too thick, add a bit of the reserved pasta water.

Season the pasta with salt and black pepper to taste.
