Kenyan Chicken Pilaf
A flavorful and nutritious Kenyan-inspired dish made with chicken, rice, and spices.
Ingredients
- β1 pound chicken breast
- β1 cup long-grain rice
- β1 medium onion
- β2 cloves garlic
- β2 tablespoons tomato paste
- β1 teaspoon curry powder
- βto taste salt
- βto taste black pepper
- β2 tablespoons olive oil
Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the chicken breast and cook until browned on both sides, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of olive oil to the skillet.

Add the onion and garlic and cook until the onion is translucent, about 3-4 minutes.

Add the tomato paste and curry powder and cook for 1 minute.

Add the rice to the skillet and cook for 1-2 minutes, stirring constantly.

Add 2 cups of water to the skillet and bring to a boil.

Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the rice is tender.
