Nourishing Korean Beef Tacos
A fusion of Korean flavors and Mexican tacos. Spicy jorim beef, crunchy slaw, and cilantro make for a delicious and healthy meal.
Ingredients
- β1 pound Flank steak
- β2 tablespoons Gochujang
- β2 tablespoons Soy sauce
- β2 tablespoons Lime juice
- β1 tablespoon Brown sugar
- β2 cloves Garlic
- β1-inch piece Ginger
- β1/4 cup, chopped Cilantro
- β1 cup, shredded Red cabbage
- β1, juiced Lime

1. In a blender or food processor, combine gochujang, soy sauce, lime juice, brown sugar, garlic, and ginger. Blend until smooth.

2. Place the flank steak in a large zip-top plastic bag. Pour the marinade over the steak and massage to coat. Seal the bag and refrigerate for at least 2 hours or overnight.

3. Preheat a grill or grill pan to medium-high heat. Remove the steak from the marinade and cook for 5-7 minutes per side, or until cooked to your desired level of doneness.

4. Transfer the steak to a cutting board and let it rest for 5 minutes. Slice the steak thinly against the grain.

5. In a large bowl, combine the shredded red cabbage, chopped cilantro, and lime juice. Toss to combine.

6. Warm tacos shells according to package instructions.

7. Assemble the tacos by placing a few slices of the beef onto a taco shell, followed by a spoonful of the slaw.
