Lamb Stew with Norwegian Flair
A hearty, nourishing stew made with lamb, inspired by the flavors of Norway. This dish is perfect for a cold winter's day.
Ingredients
- ●1 1/2 pounds Lamb shoulder, cut into 2-inch pieces
- ●4 cups Norwegian lamb broth
- ●2 large Carrots, peeled and sliced
- ●2 large Potatoes, peeled and cubed
- ●1 large Onion, chopped
- ●3 cloves Garlic, minced
- ●2 tablespoons All-purpose flour

Heat oil in a large Dutch oven over medium-high heat.

Brown the lamb pieces on all sides, about 5 minutes. Remove from pot and set aside.

Add more oil if necessary, then sauté the onion and garlic until softened, about 5 minutes.

Add the carrots and potatoes, and cook for 5 minutes, stirring occasionally.

Add the flour and cook for 1 minute, stirring constantly.

Gradually add the broth, whisking continuously. Bring to a boil, then reduce heat to low and simmer for 10 minutes.

Return the lamb to the pot, cover, and simmer for 1 1/2 hours, or until the lamb is tender.
