Japanese Chicken Chirashi Bowl
A healthy and flavorful Japanese-inspired dish featuring chicken and rice, perfect for a weeknight dinner. Chirashi means 'scattered' in Japanese, describing the way the ingredients are arranged on top of the rice.
Ingredients
- β1 cup Japanese short-grain rice
- β1 lb Boneless, skinless chicken breasts
- β2 tbsp Sushi vinegar
- β1 tbsp Soy sauce
- β1 tsp Sesame oil
- β1/2 cup Grated daikon
- β1 cup Sliced shiitake mushrooms
- β1/4 cup Chopped scallions

Cook the Japanese short-grain rice according to package instructions.

In a small saucepan, combine sushi vinegar, soy sauce, and sesame oil. Bring to a boil over medium heat, then reduce heat to low and simmer for 5 minutes.

Season the chicken breasts with salt and pepper. Grill or pan-fry the chicken until cooked through, about 5-6 minutes per side.

Slice the cooked chicken into thin strips.

In a large bowl, combine the cooked rice, sliced chicken, grated daikon, and sliced shiitake mushrooms.
