Mapo Tofu
A classic Sichuan dish made with tofu, ground meat, and chili peppers. This mapo tofu recipe is a staple of Chinese cuisine.
Ingredients
- β250g tofufirm or soft, whichever is available
- β200g ground porkor ground beef for variation
- β3 chili pepperssliced
- β3 cloves garlicminced
- β2 inches gingersliced
- β2 tbsp soy sauceor tamari for gluten-free option
- β1 tsp sugaror to taste
- β1 tsp cornstarchoptional
- β1 tsp chili oilor to taste
- β1/4 cup scallionschopped, for garnish

Heat oil in a wok or large skillet over high heat.

Add sliced chili peppers and cook until fragrant.

Add ground pork and cook until browned, breaking it up with a spatula.

Add garlic, ginger, and chili oil. Cook until fragrant.

Add tofu and stir-fry until it's golden brown.

In a small bowl, mix soy sauce, sugar, and cornstarch (if using). Pour the mixture into the wok or skillet.

Stir-fry for another minute, until the sauce has thickened.

Season with salt to taste.
