British Shepherd's Pie Vegetarian
A classic British dish made vegetarian by replacing the traditional lamb with a rich vegetable filling. This comforting casserole is perfect for a chilly evening.
Ingredients

- ●8 oz Mushroomssliced
- ●1 cup Peasfresh or frozen
- ●2 large Potatoespeeled and chopped
- ●2 cups Nourishing brothvegetable broth
- ●1 cup British bitter beervegetarian beer
- ●1 packet Shepherds pie mixvegetarian mix

Preheat oven to 350°F (180°C).

In a large pan, sauté the onions, mushrooms, and carrots over medium heat until the vegetables are tender.

Add the peas, nourishing broth, and British bitter beer to the pan. Bring to a simmer and cook until the liquid has reduced slightly.

In a separate pan, boil the chopped potatoes until they are tender.

Mash the cooked potatoes with a fork or potato masher.

Transfer the vegetable mixture to a 9x13 inch baking dish.

Spread the mashed potatoes over the top of the vegetable mixture.

Top with the shepherds pie mix and bake for 25-30 minutes, or until the potatoes are golden brown.
