Lamb Koftas with Arabian Spices
A flavorful and aromatic Middle Eastern-inspired lamb dish, perfect for a summer evening. The combination of spices and herbs adds a unique twist to traditional koftas.

- β2 teaspoons Arabian Spicesavailable in most Middle Eastern markets
- β1/4 cup Olive Oilfor brushing the grill
- β1 medium Onionfinely chopped
- β3 cloves Garlicminced
- β1/4 cup Fresh Parsleychopped
- β1 teaspoon Saltadjust to taste
- β1/2 teaspoon Black Pepperadjust to taste
- β4-6 Pita Breadfor serving

2. In a large bowl, combine the ground lamb, Arabian spices, olive oil, onion, garlic, parsley, salt, and black pepper. Mix well with your hands until just combined.

3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

4. Remove the lamb mixture from the refrigerator and use your hands to shape it into 8-10 koftas, about 1 1/2 inches in diameter.

5. Thread the koftas onto skewers, if using.

6. Brush the grill with olive oil to prevent sticking.

7. Grill the koftas for 4-5 minutes per side, or until they are cooked through and slightly charred.
