French Grapefruit Crème Brûlée with Toasted Almonds
A rich and creamy French dessert with a caramelized sugar crust and the tangy flavor of grapefruit.
Ingredients

- ●1 cup granulated sugar
- ●1/2 cup fresh grapefruit juice
- ●1 cup heavy cream
- ●1 large egg
- ●1 tablespoon unsalted butter
- ●1/4 cup finely sliced almonds
- ●1 tablespoon zest of 1 large grapefruit

Preheat the oven to 300°F (150°C).

In a medium saucepan, whisk together the egg yolks and granulated sugar. Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon, about 10 minutes.

Remove the saucepan from the heat and stir in the grapefruit juice, heavy cream, and unsalted butter until smooth.

Strain the mixture into 4-6 ramekins or small baking dishes. Place the ramekins in a large baking dish and add hot water to come halfway up the sides of the ramekins.

Bake for 25-30 minutes, or until the edges are set and the centers are still slightly jiggly.

Remove the ramekins from the water bath and let cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.

Just before serving, sprinkle a thin layer of granulated sugar over the top of each ramekin. Caramelize the sugar with a kitchen torch or under the broiler.

Garnish with toasted almonds and a sprinkle of grapefruit zest, if desired.
