Carne con Chivo
A traditional Mexican dish made with tender goat meat and a tangy slaw. Serve with warm tortillas and your favorite hot sauce.
Ingredients
- β1 pound goat meatcut into small pieces
- β1 medium red onionchopped
- β1 medium cabbageshredded
- β2 tablespoons apple cider vinegarfor slaw
- β2 tablespoons lardfor browning
- β1 teaspoon oreganodried
- β3 cloves garlicminced
- β1 teaspoon saltfor seasoning
- β1/2 teaspoon black pepperfor seasoning
Instructions

Heat the lard in a large skillet over medium-high heat.

Brown the goat meat on all sides, about 5 minutes.

Remove the goat meat from the skillet and set aside.

Add the chopped onion to the skillet and cook until softened, about 3 minutes.

Add the shredded cabbage to the skillet and cook until slightly browned, about 5 minutes.

Add the minced garlic to the skillet and cook for 1 minute.

Return the goat meat to the skillet and add the dried oregano, salt, and black pepper.

Cook for an additional 5 minutes, or until the goat meat is tender.
