Kenyan Roast Mushroom Stir Fry
A simple and flavorful Chinese-inspired stir fry made with roasted mushrooms, Kenyan spices, and roasted chicken.
Ingredients
- β1 cup sliced mushrooms
- β1 tsp ground kenyanKenyan curry powder or substitute with curry powder
- β1 cup diced cooked chicken roastleftover or store-bought roast chicken
- β2 tbsp vegetable oil
- β2 cloves minced garlicoptional
- β1-inch piece grated gingeroptional
- β1 tbsp soy sauce
- βto taste salt
- βto taste pepper
Instructions

Heat 1 tbsp of vegetable oil in a wok or large skillet over medium-high heat.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 3-4 minutes.

Add the minced garlic and grated ginger (if using) and cook for another minute.

Add the diced cooked chicken and stir to combine with the mushrooms and any juices.

Add the Kenyan spice, soy sauce, salt, and pepper, and stir to combine.

Cook for an additional 2-3 minutes, until the chicken is coated in the sauce and the flavors have melded together.
