Moroccan Tagine Stew
A hearty vegetarian stew inspired by the flavors of Morocco, made with a variety of vegetables and aromatic spices.
Ingredients
- β2 cups Carrots
- β2 Red bell peppers
- β1 large Onions
- β3 cloves Garlic
- β1 can Canned diced tomatoes
- β1/2 cup Olives
- β1 can Chickpeas
- β2 tsp Tagine spice blend
- β4 cups Vegetable broth
- β1 cup Lamb broth (or vegetable broth as a substitute)
Instructions

Heat 2 tablespoons of oil in the bottom of a large clay tagine or Dutch oven over medium heat.

Add the onions and cook until softened, about 5 minutes.

Add the garlic and cook for another minute.

Add the carrots and red bell peppers and cook for 5 minutes.

Add the diced tomatoes, olives, chickpeas, tagine spice blend, vegetable broth, and lamb broth (or substitute).

Bring to a boil, then reduce heat to low and simmer, covered, for 30 minutes.

Season with salt and pepper to taste.

Serve hot, garnished with fresh parsley or cilantro if desired.
