Mexican Chicken Quesadillas
Juicy chicken and melted cheese wrapped in a crispy tortilla, served with a side of fresh salsa.
Ingredients
- β4 Boneless, skinless chicken breastscut into thin strips
- β4 Tortillas (corn or flour)large size
- β1 cup Monterey Jack cheeseshredded
- β1 cup Salsa (homemade or store-bought)optional
- β1/2 cup Sour creamoptional
- β1/4 cup Chopped fresh cilantrooptional
- β2 tbsp Olive oilfor cooking
- β Salt and pepperto taste

Preheat a large skillet over medium-high heat.

Cook the chicken strips in the skillet until browned and cooked through, about 5-6 minutes.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

In a large bowl, combine the cooked chicken, shredded cheese, and a sprinkle of cilantro (if using).

Place a large tortilla in the skillet and sprinkle a quarter of the chicken and cheese mixture onto half of the tortilla.

Fold the tortilla in half to enclose the filling and cook for 2-3 minutes, until the tortilla is crispy and the cheese is melted.

Flip the quesadilla and cook for an additional 2-3 minutes, until the other side is also crispy and the cheese is melted.

Repeat with the remaining tortillas and filling.

Cut the quesadillas into wedges and serve with salsa, sour cream, and additional cilantro (if using).
