Smoky Filipino Keto Pappardelle
A keto twist on a classic Filipino dish, featuring smoky flavors and a delicious smoky Filipino-inspired sauce.
Ingredients
- β8 oz Pappardelle
- β1 lb Smoked Pork Belly
- β2 tbsp Coconut Oil
- β4 cloves Garlic
- β1 piece (about 1 inch long) Ginger
- β2 tsp Fish Sauce
- β1 tsp Soy Sauce (make sure it's sugar-free for keto)
- β1 tsp Sambal Oelek
- β1 tsp Chili Flakes
- β1/4 cup chopped Fresh Cilantro

Bring a large pot of salted water to a boil. Cook the pappardelle according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

In a large skillet, heat the coconut oil over medium-high heat.

Add the smoked pork belly and cook until browned on all sides, about 5 minutes.

Remove the pork belly from the skillet and set aside.

In the same skillet, add the garlic and ginger and cook until fragrant, about 1 minute.

Add the fish sauce, soy sauce, sambal oelek, and chili flakes to the skillet. Cook for 1-2 minutes, stirring constantly.

Add the reserved pasta water to the skillet and stir to combine.

Return the pork belly to the skillet and stir to coat with the sauce.

Add the cooked pappardelle to the skillet and toss everything together.

Season with salt to taste.
