Smoked Salmon Sandwich
A delicious and easy-to-make gluten-free sandwich, perfect for a light lunch or snack.
Ingredients
- β4 oz Smoked salmonpreferably wild-caught
- β2 tbsp Mustardy mayonnaisestore-bought or homemade
- β2 tbsp Silky cream cheesesoftened to room temperature
- β1 loaf Scottish flatbreadgluten-free and toasted
- β4 slices Afternoon tea picklesthinly sliced
- β1 tsp Tea leavesdried and used as a garnish
Instructions

Preheat a panini press or grill to medium-high heat.

Lay a slice of toasted Scottish flatbread on a clean surface.

Spread a layer of silky cream cheese on the flatbread, leaving a 1/2 inch border around the edges.

Place 2 oz of smoked salmon on top of the cream cheese.

Add 2 slices of afternoon tea pickles on top of the salmon.

Drizzle a tablespoon of mustardy mayonnaise over the pickles.

Top with another slice of toasted Scottish flatbread.

Place the sandwich in the panini press or grill and cook for 2-3 minutes or until the bread is golden brown.

Garnish with a sprinkle of tea leaves and serve immediately.
