Tofu Skewers with Mushy Pea Salsa

Ingredients
- β1 block (200g) tofu
- β1 cup (120g) mushy peas
- β1 small (50g) norwegian red onion
- β1 small (50g) norwegian red bell pepper
- β1 (for serving) bowl
- β2 tbsp (30ml) lemon juice
- β1 tbsp (15ml) olive oil
- βto taste salt

1. Cut the tofu into bite-sized pieces and place in a bowl.

2. In a separate bowl, whisk together lemon juice, olive oil, salt, and pepper.

3. Pour the marinade over the tofu and mix well.

5. Grill the skewers for 8-10 minutes, or until the tofu is golden brown.
