Irish Potato Casserole
A hearty Italian-inspired casserole featuring Irish potatoes and a creamy mushroom sauce.
Ingredients
- β3 large Irish potatoes (thinly sliced)about 1 1/2 pounds
- β1 cup Mushrooms (thinly sliced)button or cremini work well
- β2 tablespoons Olive oil
- β2 cloves Garlic (minced)
- β1/2 cup Onion (chopped)
- β2 tablespoons Tomato paste
- β1/4 cup Chopped fresh parsley
- β1 cup Grated Parmesan cheese
- β1 Casserole

Preheat oven to 375Β°F (190Β°C).

In a large skillet, heat the olive oil over medium heat.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the minced garlic and chopped onion to the skillet and cook for another 2 minutes.

Stir in the tomato paste and cook for 1 minute.

In a large bowl, combine the cooked mushroom mixture, sliced Irish potatoes, and chopped parsley.

Transfer the mixture to a 9x13 inch casserole dish and top with grated Parmesan cheese.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for another 15-20 minutes, or until the top is golden brown and the potatoes are tender.
