Vegan Miso Soup with Toast
A simple and comforting soup made with a miso paste made from koji, served with crispy toast.

Ingredients
- β100g Koji
- β200g Egyptian Mushy Peas
- β2 tbsp Shoyu
- β4 slices Toast

Instructions

In a pan, heat 2 tbsp of shoyu over low heat.

Add 100g of koji and cook for 5 minutes, stirring occasionally.

Add 200g of egyptian mushy peas and cook for a further 5 minutes, stirring occasionally.

Season with additional shoyu to taste.

Serve hot with crispy toast on the side.
