Revithia Feta Pie
A traditional Greek savory pie filled with revithia and crumbled feta cheese.
Ingredients
- β1 1/2 cups revithia flour
- β8 oz, crumbled feta cheese
- β1/2 cup water
- β1 tsp yeast
- β1/4 tsp salt
- β2 tbsp olive oil
- β1/4 cup chopped fresh parsleyoptional

1. In a large mixing bowl, combine revithia flour and yeast.

2. Gradually add water, mixing until a dough forms.

3. Knead the dough for 5-7 minutes, until it becomes smooth and elastic.

4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour.

5. Preheat oven to 375Β°F (190Β°C).

6. Punch down the dough and divide it into 2 equal pieces.

7. Roll out each piece of dough into a thin circle.

8. Place one circle of dough in a greased 9-inch pie dish.

9. Spread half of the feta cheese on the dough, leaving a 1-inch border around the edges.

10. Sprinkle chopped parsley on top of the feta cheese, if using.

11. Place the second circle of dough on top of the filling and press the edges to seal.
