Jamaican Chicken Skewers
Tender chicken marinated in Jamaican spices and grilled to perfection. Serve with a side of naan or rice for a delicious Indian-inspired meal.
Ingredients
- β500g Chicken breastcut into 1-inch pieces
- β2 tsp Jamaican jerk seasoningstore-bought or homemade
- β2 tbsp Lime juicefreshly squeezed
- β1 tsp Honeyoptional
- β2 tbsp Olive oilfor brushing skewers
- β2 Bell peppersany color, cut into 1-inch pieces
- β1 Onionscut into 1-inch pieces
- β2 Tomatoescherry or grape, halved

Preheat grill to medium-high heat (400Β°F/200Β°C).

In a large bowl, whisk together jerk seasoning, lime juice, and honey (if using).

Add chicken to the marinade and mix well to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.

Thread chicken, bell peppers, onions, and tomatoes onto skewers, leaving a little space between each piece.

Brush skewers with olive oil and season with salt and pepper.

Grill skewers for 8-10 minutes per side, or until chicken is cooked through and vegetables are tender.

Serve hot with naan or rice, garnished with fresh cilantro if desired.

Note: If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
