Split Pea and Slovakian Sausage Stew
A hearty Italian-inspired stew made with Slovakian sausage, split peas, and a hint of monsoon spice. Perfect for a cold winter's night.
Ingredients
- β1 pound Slovakian sausageSlice the sausage into 1/2-inch pieces
- β1 cup dried Split peasRinse and sort the peas before using
- β2 teaspoons Monsoon spice blendUse a store-bought or homemade blend
- β1 medium OnionChop the onion into 1-inch pieces
- β3 cloves GarlicMinced garlic
- β2 tablespoons Mustardy vinegarUse a store-bought or homemade vinegar

Heat 2 tablespoons of olive oil in a large Dutch oven over medium-high heat.

Add the sliced sausage and cook until browned, about 5 minutes.

Remove the sausage from the pot and set it aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the split peas, monsoon spice blend, and mustardy vinegar to the pot.
