Turkish Stew
A hearty stew originating from Turkey, made with kuru and fasulye. This recipe serves 4-6 people and can be prepared in about 1 hour.

Ingredients
- β200g kuruuse dried white beans
- β500g fasulyeuse fresh or canned beans
- β2 tbsp, chopped bottargaoptional, for flavor
- β1 medium, chopped onionsaute with garlic
- β3 cloves, minced garlicsaute with onion
- β2 tbsp tomato pasteadd for flavor
- β2 cups wateruse for stew

Instructions

Heat oil in a pan over medium heat. Add onion and garlic and saute until softened.

Add kuru and cook for 2-3 minutes, stirring frequently.

Add fasulye, tomato paste, and water. Bring to a boil, then reduce heat.

Simmer for 30-40 minutes, or until the beans are tender.

Stir in chopped bottarga (if using). Season with salt and pepper to taste.
