Mexican Street Empanada
A crispy, savory pastry filled with spicy beef and onions, perfect for snacking on the go.
Ingredients
- β1 lb Ground beef80/20 lean to fat ratio
- β1 medium OnionFinely chopped
- β3 cloves GarlicMinced
- β1 tsp CuminGround
- β1 tsp Chili powderGround
- β1 box (10-12 count) Empanada doughHomemade or store-bought
- β1 cup Shredded cheeseMonterey Jack or Cheddar

Preheat oven to 375Β°F.

In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon as it cooks.

Once the beef is browned, add the chopped onion and minced garlic. Cook until the onion is translucent.

Stir in cumin and chili powder. Cook for 1 minute.

Roll out the empanada dough according to package instructions.

Spoon a tablespoon or two of the beef mixture onto the center of each dough circle.

Top with shredded cheese.

Fold the dough in half to form a triangle or a square shape, pressing the edges to seal.

Brush the tops of the empanadas with a little bit of water and bake for 15-20 minutes, or until the pastry is golden brown.
