Polish Fish Pilaf
A hearty and flavorful pilaf dish made with fish, polish sausage, and molten cheese.
Ingredients
- β1 pound Fish (Cod or Salmon)Fresh, skin removed
- β1/2 pound Polish SausageSliced
- β1/2 cup, shredded Molten CheeseGouda or Cheddar
- β2 cups PilafWhite or Brown rice
- β2 tablespoons Olive OilFor cooking
- β1 medium OnionChopped
- β2 cloves GarlicMinced
- β Salt and PepperTo taste
- β Fresh ParsleyChopped (optional)

Preheat oven to 375Β°F (190Β°C).

Cook the pilaf according to package instructions.

In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.

Add the sliced polish sausage to the skillet and cook until browned, about 5 minutes.

Add the minced garlic to the skillet and cook for 1 minute.

Add the fish to the skillet, skin side up. Cook for 2-3 minutes, then flip and cook for an additional 2-3 minutes.

Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the fish is cooked through.

Flake the cooked fish into the pilaf and stir to combine.

Top with shredded molten cheese and return to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.

Serve hot, garnished with chopped fresh parsley if desired.
