Szechuan Chicken Pilaf
A flavorful and spicy Chinese-inspired dish featuring chicken, pilaf, and a hint of Szechuan pepper.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β2 cups pilafcooked according to package instructions
- β2 tablespoons vegetable oilfor cooking
- β3 cloves garlicminced
- β1-inch piece gingergrated
- β1 teaspoon Szechuan pepperground
- β2 tablespoons soy saucefor marinating
- β1/4 cup scallionschopped, for garnish
Instructions

Marinate the chicken in soy sauce for at least 15 minutes.

Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.

Add the chicken and cook until browned and cooked through, about 5-7 minutes.

Remove the chicken from the wok and set aside.

Add the remaining 1 tablespoon of vegetable oil to the wok.

Add the minced garlic and grated ginger and cook for 1 minute, stirring constantly.

Add the pilaf to the wok and cook for 2-3 minutes, stirring constantly.

Add the cooked chicken back into the wok and stir to combine with the pilaf.
