Thai Lobster Miso Stew
A rich and flavorful Thai-inspired stew featuring succulent lobster meat, savory miso paste, and aromatic spices.
Ingredients

- β2 tablespoons miso pastewhite miso
- β1 teaspoon jamaican allspiceground
- β2 cups stewchicken broth
- β1 can coconut milkfull-fat
- β1 tablespoon fish sauceoptional
- β2 tablespoons lime juicefreshly squeezed
- β1/4 teaspoon chili flakesoptional
- β1/4 cup scallionschopped, for garnish
- β1/4 cup basil leaveschopped, for garnish

In a large pot or Dutch oven, heat 2 tablespoons of oil over medium heat.

Add the jamaican allspice and cook, stirring constantly, for 1 minute.

Add the lobster meat and cook until lightly browned, about 2-3 minutes.

Add the stew (chicken broth), coconut milk, fish sauce (if using), and miso paste. Whisk until the miso is dissolved.

Bring the mixture to a simmer and cook, covered, for 5-7 minutes or until the lobster is cooked through.

Stir in the chili flakes (if using) and cook for an additional 1-2 minutes.
