Spicy Shungiku Paella
A vegan twist on the classic Spanish dish, featuring the spicy flavor of mildly spicy peppers and the unique taste of shungiku.
Ingredients
- β2 cups, sliced mildly spicy peppers
- β1 bunch, chopped shungiku
- β1 cup paella rice
- β2 cups vegan broth
- β2 tbsp tomato paste
- β2 tbsp olive oil
Instructions

Heat the olive oil in a large paella pan or skillet over medium-high heat.

Add the sliced mildly spicy peppers and cook until they start to soften, about 3 minutes.

Add the chopped shungiku and cook until it starts to wilt, about 2 minutes.

Add the paella rice and stir to coat with the oil and mix with the vegetables.

Add the vegan broth and tomato paste, and stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.
