Grilled Vegetable Skewers
A colorful and flavorful vegetarian dish featuring marinated vegetables grilled to perfection on skewers.
Ingredients

- β1 onionany color onion works
- β2 mildly spicy peppersuse any mildly spicy peppers you like (e.g. Anaheim)
- β2 tbsp olive oilfor brushing the skewers
- β2 tbsp lemon juicefor marinating the vegetables
- β1 tsp garlic powderfor marinating the vegetables
- βto taste saltfor seasoning the vegetables
- βto taste black pepperfor seasoning the vegetables

Preheat grill to medium-high heat.

Thread the vegetables onto the skewers, leaving a little space between each piece.

In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and black pepper.

Brush the marinade onto the vegetables, making sure they are all coated.

Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the vegetables are tender and lightly charred.
