Spicy Thai Noodle Dish
A quick and flavorful noodle dish made with a spicy and sour Thai-inspired sauce. This dish is perfect for a weeknight dinner.
Ingredients
- β8 oz Rice Noodles
- β2 tbsp Vegetable Oil
- β1 medium Onionchopped
- β1 medium Bell Pepperchopped
- β2 tbsp Thai Red Curry Paste
- β2 tbsp Fish Sauce
- β1 tbsp Soy Sauce
- β1/4 cup Sliced Fresh Cilantro
- β1/4 cup Sliced Fresh Chili Peppersoptional

Cook the rice noodles according to package instructions.

In a large skillet, heat the vegetable oil over medium-high heat.

Add the chopped onion and bell pepper and cook until tender.

Add the Thai red curry paste and cook for 1-2 minutes.

Add the fish sauce, soy sauce, and 1 cup of water to the skillet.

Bring the sauce to a simmer and cook for 2-3 minutes.

Add the cooked noodles to the skillet and toss to coat with the sauce.
