Thai-Style Lentil Stew
A spicy and flavorful Thai-inspired lentil stew made with red lentils, onions, garlic, and a blend of aromatic spices.
Ingredients
- β1 cup red lentilsrinsed and drained

- β3 cloves garlicminced
- β2 tablespoons mildly spicy curry paste
- β2 tablespoons irish buttermelted
- β4 cups vegetable broth
- β1 cup water
- β1 teaspoon salt
- β1/2 teaspoon black pepper
- β1/4 cup fresh cilantrochopped, for garnish
Instructions

Heat the irish butter in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Stir in the mildly spicy curry paste and cook for 1-2 minutes.

Add the red lentils, vegetable broth, water, salt, and black pepper.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the lentils are tender.
