Spicy Chicken Paella
A Thai twist on the classic Spanish dish, this spicy chicken paella is a flavorful and aromatic meal perfect for a dinner party.
Ingredients
- ●1 lb chicken breastcut into bite-sized pieces
- ●2 cups mildly spiced spanish ricepreferably day-old rice
- ●2 tsp mildly spiced paella seasoningadjust to taste
- ●2 tbsp olive oilfor cooking
- ●1 medium onionchopped
- ●1 medium bell pepperchopped
- ●2 cups chicken brothlow-sodium
- ●1 cup coconut milkfull-fat
Instructions

Heat 1 tablespoon of olive oil in a large paella pan or skillet over medium-high heat.

Add the chicken to the pan and cook until browned, about 5 minutes.

Remove the chicken from the pan and set aside.

Add the remaining 1 tablespoon of olive oil to the pan and sauté the onion and bell pepper until softened, about 5 minutes.

Add the paella seasoning and cook for 1 minute, stirring constantly.

Add the chicken broth to the pan and bring to a boil.

Add the rice to the pan and stir to coat with the broth.
