Irish Lamb Stew
A hearty and comforting Irish stew made with tender lamb, potatoes, and vegetables.
Ingredients
- β1 pound LambCut into 1-inch cubes
- β2 medium CarrotsPeel and chop
- β2 large PotatoesPeel and chop
- β1 medium OnionChop
- β2 teaspoons Mildly Spiced Irish Stew Seasoning
- β2 tablespoons All-purpose Flour
- β1/4 cup Sour CreamOptional
- β2 cups Water

Heat oil in a large Dutch oven over medium-high heat.

Add the lamb to the pot and cook until browned, about 5 minutes.

Remove the lamb from the pot and set aside.

Add the onions to the pot and cook until softened, about 5 minutes.

Add the carrots and potatoes to the pot and cook for 5 minutes.

Add the flour to the pot and cook for 1 minute.

Add the lamb back to the pot, along with the stew seasoning and water.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the lamb is tender.

Serve hot, topped with a dollop of sour cream if desired.

If the stew seems too thick, add a little more water.
