Kenyan Lentil Stew
A hearty and flavorful stew originating from Kenya, made with lentil, mildly smoky spices, and a hint of dal.

Ingredients
- ●1 cup, dried lentilrinse and soak overnight
- ●2 tablespoons dalground coriander
- ●1 medium onionchopped
- ●2 cloves garlicminced
- ●1 inch gingergrated
- ●1 teaspoon mildly smoky spice blend Kenyan-style spice blend
- ●2 tablespoons tomato pasteor 1 can crushed tomatoes
- ●4 cups vegetable brothlow-sodium
- ●2 cups water

Instructions

Heat oil in a large pot over medium heat.

Add onion, garlic, and ginger; sauté until onion is translucent.

Add lentil, dal, and mildly smoky spice blend; stir to combine.
