Smoky Spanish Sausage-Free Paella
A flavorful, vegan take on traditional Spanish paella, using smoky sausages alternatives and a variety of vegetables.
Ingredients
- β1 package (about 4 sausages) Mildly Smoked Vegan Sausages
- β2 tbsp Charred Smoked Paprika
- β1 cup Spanish-Style Rice
- β2 cups Mixed Bell Peppers
- β1 medium Onion
- β3 cloves Garlic
- β2 medium Tomato
- β2 tbsp Olive Oil
- β2 cups Vegetable Broth
- βto taste Salt
Instructions

Heat the olive oil in a large paella pan over medium-high heat.

Add the sliced onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes.

Add the mixed bell peppers and cook until tender, about 5 minutes.

Add the smoked vegan sausages and cook until browned, about 5 minutes.

Add the Spanish-style rice, smoked paprika, salt, and vegetable broth. Stir to combine.

Bring the mixture to a simmer, then reduce the heat to low and cook, covered, for 20-25 minutes.
