Lamb Kofte with Stir-Fried Vegetables
Inspired by Turkish flavors, this lamb kofte recipe is served with a quick and easy Chinese-style stir-fry. Perfect for a weeknight dinner.
Ingredients
- β1 package (12 kofte) Lamb Kofte Mix
- β2 tablespoons Vegetable Oil
- β2 cloves Garlic
- β1-inch piece Ginger
- β1 large Bell Peppers
- β2 medium Carrots
- β1 cup Snow Peas
- β2 tablespoons Soy Sauce
- β1 tablespoon Hoisin Sauce
- β1 teaspoon Sesame Oil

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the lamb kofte and cook until browned on all sides, about 5 minutes.

Remove the kofte from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil.

Add the garlic and ginger and cook for 1 minute, until fragrant.

Add the bell peppers and carrots and cook for 3-4 minutes, until tender.

Return the lamb kofte to the skillet and stir in the soy sauce, hoisin sauce, and sesame oil.
