Spicy Chinese Kidney Bean Stew
A hearty, comforting stew originating from China, made with kidney beans, mildly pungent flavors, and a touch of Peruvian spices.
Ingredients
- ●1 cup Kidney Beans (cooked)
- ●2 medium Mildly Pungent OnionChopped
- ●2 tbsp Peruvian Ají AmarilloPaste
- ●2 tbsp Bean Stew Sauce
- ●2 inches GingerSliced
- ●3 cloves GarlicMinced
- ●to taste Salt
- ●to taste Black Pepper
- ●1/4 cup Green OnionsChopped (optional)
- ●1 tsp Sesame Oil

1. Heat sesame oil in a large pan over medium heat.

2. Add sliced ginger and cook for 1-2 minutes until fragrant.

3. Add minced garlic and cook for another minute.

4. Add chopped onion and cook until softened, about 3-4 minutes.

5. Stir in Peruvian Ají Amarillo paste and cook for 1 minute.

6. Add cooked kidney beans, bean stew sauce, salt, and black pepper.

7. Stir well to combine and bring to a simmer.

8. Reduce heat to low and cook for 10-15 minutes or until the stew thickens.
