Argentinian Chicken Stew
Hearty and flavorful stew originating from Argentina, made with tender chicken and a blend of spices.
Ingredients
- β1 1/2 pounds chicken thighsbone-in, skin-on
- β1 pound mildly peppery sausage
- β1 large onion
- β3 cloves garlic
- β1 large red bell pepper
- β2 cups tomatoescanned, diced
- β2 cups stew
- β2 cups chicken broth
- β2 tablespoons worcestershire sauce
- β1 teaspoon dried oregano
- β salt and pepper

Heat oil in a large pot over medium-high heat.

Brown the chicken and sausage on all sides.

Remove the chicken and sausage from the pot, and set aside.

Add more oil if necessary, then sautΓ© the onion, garlic, and red bell pepper until tender.

Add the tomatoes, stew, chicken broth, Worcestershire sauce, and dried oregano.

Stir to combine, then return the chicken and sausage to the pot.

Bring the stew to a boil, then reduce the heat to low and simmer for 30 minutes.
