Scottish Chickpea Pasty
A twist on the traditional Cornish pasty, infused with the flavors of Scotland and the comfort of chickpeas.
Ingredients
- β1 1/2 cups chickpeasdrained and rinsed
- β1 cup mildly seasoned sausagediced
- β1 package scottish shortbread crust mixfollow package directions for gluten-free
- β1/2 cup cornish pasty crust ingredientsall-purpose flour, salt, and sugar
- β1 medium oniondiced
- β2 cloves garlicminced
- β1 tsp salt
- β1/2 tsp black pepper
- β1/4 cup water

1. Preheat oven to 375Β°F (190Β°C).

2. In a large bowl, combine shortbread crust mix, flour, salt, and sugar. Mix well.

3. Gradually add water to the bowl, stirring until the dough forms.

4. Divide the dough into 4-6 equal pieces, depending on desired pasty size.

5. Roll out each piece into a thin circle, about 1/8 inch thick.

6. Place a tablespoon of sausage and a quarter cup of chickpeas in the center of each circle.

7. Fold the dough over the filling, pressing edges together to seal.

8. Use a fork to crimp the edges and create a decorative border.

9. Place the pasties on a baking sheet lined with parchment paper.

10. Brush the tops with a beaten egg for a golden glaze.
