Kenyan Chicken Pilaf
A flavorful and aromatic Kenyan-inspired dish made with chicken, pilaf, and a hint of citrus.
Ingredients
- β1 pound Boneless, skinless chicken breastscut into 1-inch pieces
- β1 cup Pilafuncooked
- β2 teaspoons Mild curry powder
- β2 tablespoons Citrus juice (orange or lemon)
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β2 tablespoons Olive oil
Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the chicken to the skillet and cook until browned, about 5-7 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of olive oil to the skillet.

Add the pilaf to the skillet and cook for 2-3 minutes, until lightly toasted.

Add the curry powder to the skillet and cook for 1 minute, until fragrant.

Add the citrus juice, salt, and black pepper to the skillet and stir to combine.
