Mildly Sweet Thai Curry with Crispy Lardons
A delicious and easy-to-make Thai curry with the added crunch of crispy lardons. Perfect for a weeknight dinner.
Ingredients
- β2 tablespoons mildly sweet curry paste
- β1 teaspoon briny fish sauce
- β6 ounces lardonscut into 1-inch pieces
- β1 can (14 oz) coconut milk
- β1 tablespoon vegetable oil
- β1/4 cup thai basilchopped
- βto taste salt
- β1 tablespoon sugar

1. Heat the oil in a large skillet or wok over medium-high heat.

2. Add the lardons and cook until crispy, about 3-4 minutes.

3. Remove the lardons from the skillet and set aside.

4. Add the curry paste to the skillet and cook for 1-2 minutes, until fragrant.

5. Add the fish sauce and cook for 1 minute.

6. Pour in the coconut milk and bring the mixture to a simmer.
